I'm Christina,

I grew up between Akron, Oh and Cocoa Beach, Fl, in 2002 I moved to Massachusetts, and met Harry, my (not legally but close enough) husband.

In August of 2010 we returned to the Space Coast (Fl) where we are now.

In 2005 we became a family of 3 with the birth of our first born son H.

H is an ornery boy, but for the most part a good kid, he is smart, sometimes, too smart for his own good. He loves school, his favorite parts of school are Reading, Spelling, Math, and of course Recess.  

In March of 2008 we were blessed again with a daughter this time, C.

 C is a shy girl, sweet, and quiet. In September of 2009 she was diagnosed with lead poisoning from a home we were renting.

She was treated and released from Boston Children's Hospital's Environmental Department with a lead level of 9 in April of 2010. During her treatment she was put on the drug Penicilamine, she had to take this drug twice a day, and for two hours before, and after each dose she was not able to eat anything with calcium, vitamin D, zinc, or any other heavy metals. This left us with little other choice than to feed her what we called at the time "Junk Food". C had to stop taking the medication prematurely she was 17 months old and not talking, so we did not have her own words to tell us what was going on, but she was inconsolable, refused to crawl or walk, had a horrible rash and a change in her BM. We stopped the medication and within 3 days the reaction would clear, the moment we started it again, the reaction would come back. We discontinued the medication immediately. It was also at this time or very shortly after we noticed that C could not eat Pasta Sauces, Ketchup, and had a great dislike for bread of all kinds. She continued to have mild reactions to foods, but it wasn't until July of 2010 that we started to put together all of the evidence of a food allergy. Since then we have put her on an (all) allergen avoidance diet, cleared her of reactions for 7 days, and added food back in until we had limited the reaction down to soy. Since we came to this conclusion we have had her undergo RAST testing, which was negative for all food allergy's, and also a skin (Ieg) test which she showed positive for environmental allergies, but no food allergies.  We are currently in flux with a diagnosis of "Soy Intolerance"  even though we have documented immune responses to food specifically Soy. 

Just in time for Christmas, in late December 2010 we were blessed with the arrival of M.


 M is a happy guy, he is full of personality and adventure. He is a climber, and a lovey, everything he does he wears a big smile, and he's always got a kiss or a hug for everyone. 

I am a Stay at home mom right now, I don't anticipate being able to go back to work until C is in school next year (2012), so I am spending my time learning how to rework our usual recipes into home made recipes, rich in taste and nutrition, while skipping out on the Soy. I have always enjoyed baking, I love making cakes and pastries. I love the smell of fresh bread in the house. I really enjoy my time in the kitchen, but I will also be the first to admit, being soy free can be very difficult  and at times does get me down. I have always loved photography, I hope that I am able to incorperate lots of pretty, and yummy pictures for you to see the deliciousness of our successes!
